Introduction: You won't believe how easy and delicious this holiday dip is. Just grab some cream cheese, feta, a dash of The Salted Rooster's magic chicken salt, and let the cranberry dance begin.
2 tbsp extra virgin olive oil
6 oz cream cheese
¼ tsp red pepper flakes
1 clove garlic, minced
6 oz feta, cubed
2 tsp The Salted Rooster Chicken Salt
2 tbsp pistachios, chopped and toasted
1 cup fresh cranberries
⅓ cup fresh orange juice
1 tsp finely grated orange (zest)
2 tbsp honey
- Mix orange juice and 1 tablespoon of honey in a little pot on medium heat. Bring it to a nice boil. Toss in cranberries and, let it boil again. Turn the heat down a bit and let it all cook, stirring now and then until those cranberries pop and get all saucy—about 7 to 8 minutes. Stir in your grated orange and let it cool down.
- Throw your feta, garlic, red pepper flakes, and chicken salt into a food processor. Pulse until the feta's all crumbly. Add cream cheese, and pulse until mixed. Slowly pour in the virgin olive oil until it's all smooth and fluffy.
- Spoon the whipped feta into a serving bowl. Top it off with your cooled cranberry sauce. Sprinkle on some pistachios and drizzle the last bit of honey. Pair your favourite flavour vehicle (crostini’s crackers, bread, etc), and you're good to go!
